There are many who avoid eating bitter gourd as it is indeed bitter. But there are several recipes that make the bitterness disappear. The stuffed bitter gourd recipe is one way.
Bitter gourd is split in the middle and the middle scraped out It is then marinated in salt for a while.
The filling can be to one’s taste. It can be either vegetarian or non vegetarian. Here I will talk about a vegetarian recipe.
Heat oil and add chopped onions and garlic with salt. Fry till brown, add spices to taste, sprinkle with roasted peanuts and chopped coriander leaves. Cool and stuff the bitter gourd after squeezing it from the marinade. Tie it with thread.
Shallow fry. The bitterness simply disappears.

I have not tried bitter. I prepare zucchini in the same way. Finally, I bake them in the oven.
