Home-made fresh fruit juice

Hidden behind the coconut fronds is the star gooseberry tree laden with fruit. Not many like this fruit as it is sour although it can be used to make pickles, jams and stuff 

I make juice with these fruits.  I wipe the fruits (no washing) and add sugar in the ratio of 1:2 where 2 are the fruits  The mixture is placed in a glass or plastic container with a lid.  The mixture is well shaken and kept in the fridge.  The process of shaking the contents continues for around seven days. The sugar will extract the juice from the fruit and the fruit will float.

The juice is then drained out.  The fruits are discarded although they can be eaten.  I normally add a liquid preservative if I make a huge quantity.
