Diabetic Coconut Bars Recipe

Diabetics must limit their intake of carbohydrates to avoid a spike in blood sugar levels. Like most other people, though, diabetics enjoy having a sweet treat now and then. Here is a recipe that diabetics can enjoy because it isn’t very high in carbohydrates, it has plenty of fat, and it is sweet. Surprisingly, each bar has less than 140 calories, too, and this recipe yields 16 bars.

In fact, these also taste great to people who aren’t diabetics. Even better, it takes around a half-hour to make them and the steps aren’t difficult. This could be a great recipe for teaching children or adults how to cook.

Coconut bar ingredients:

¼ cup unsweetened shredded coconut

¼ cup powdered (dry) milk

¼ cup Stevia in the Raw™ or similar stevia product

3 oz nonfat ricotta cheese

Coconut bar instructions:

1. In a frying pan (Teflon coated pan preferred since it resists sticking), heat the ricotta cheese over medium heat.

2. Thoroughly stir in the powdered milk and cook the mixture for about 15 minutes, stirring frequently to prevent scorching or sticking. This should boil off most of the fluids.

3. Stir in the Stevia. The mixture may become fluid again, but that is okay. Cook another 5 minutes, then stir in the coconut and mix well. This should substantially thicken the mixture.

4. Turn the mixture into an 8 inch by 8-inch greased baking pan, using a spatula to press it in firmly.

5. Cut the mixture into 16 bars and then allow it to cool completely. The bars will become firmer as they cool. When they are entirely at room temperature, the bars can be removed from the pan.

These are tasty and sweet treats that diabetics can enjoy and they are even great snacks for kids and non-diabetics. Assuming that they aren’t immediately eaten, despite the temptation to do so, they can be stored in the refrigerator. Refrigerated, they should last a week or longer, but for most folks, they’ll be eaten long before then. Who said diabetics couldn’t enjoy sweet treats?
