Betalains

I love it when I learn a new word. Today the word is betalains. It is officially defined as “A group of plant pigments found almost exclusively in the family Centrospermae, for example, betanin. There are two groups: betacyanines (in red-violet plants) and betaxanthins (in yellow plants)”.

Why am I learning about the word? My fabulous doctor wants my family to enjoy some of the benefits of adding more foods with these options to our diet. One of the facts she shared with me is that just 3 cups of beets weekly can improve your focus and concentration skills by 25%.  I think that sounds fabulous. It also helps with inflammation and anyone who has gone to physical therapy knows that inflammation is the enemy.

The other food is cactus. I have never eaten cactus. I did go on line and order some that we can try. I am not sure how I am going to talk the guys into catus, Maybe someone here will help.

  1. I have only tried a jam made of cactus and strawberry and it was delicious. As for beets, I think that they are very versatile and can be used in both sweet and savory dishes. Thanks for sharing! 🙂
