Not really. There are a few saints who may be nothing more than legends, but the vast majority can be documented either by their own writings or contemporary sources. They are not Christianized versions of pagan deities.

The funny thing is that Halloween gets more attention than All Saints Day which is birthday of the NFL football team the New Orleans Saints.
