Key Lime Pie is one of my favorite desserts, but due to my daughter’s food allergies, we don’t make it very often. Finally, I decided to come up with a “vegan” Key Lime Pie recipe. My daughter is allergic to milk and eggs. Most Key Lime Pie recipes call for sweetened condensed milk and egg yolks. Hence, my dilemma. By replacing the sweetened condensed milk with vanilla soy creamer and by using soy margarine and flour as a thickener, I was able to come up with a viable alternative.
