In ancient Egypt, cinnamon was used in the embalming process.  In the Old Testament Book of Exodus, the cinnamon tree produced bark and oil which was used for the anointing oil.  When a person was set apart for a particular work or service toGod, a part of the public religious ritual or ceremony, so that others knew that person had been sanctified or “anointed”, was to pour oil on their head.  Hence, it was called “anointing oil”. Not sure who figured out what, when, and where, but I’m glad folks decided to use cinnamon as a main ingredient in their cooking! Health experts say cinnamon can be used to lower cholesterol.  That’s the more reason to include cinnamon in your recipes.
