Tales of a Business Trouble Shooter – Part Five

Over Staffing

There was a Hotel that once was a popular dinner place. The owner over did it, by turning the entire back area into a massive restaurant with fifty tables.

There were ten waitresses at the time, with a few others ‘on call’.

As time passed, the number of guests began to drop. Yet, there were ten waitresses.

I spoke to the Owner, explaining the danger of having too many employees. He retorted with the pittance he paid them as if he were giving charity.

It always happens when a place is over staffed; people start to get bored and instead of sleeping or reading text they begin to quarrel. They forget they are at work, because they don’t feel as if they are at work. They feel as if they are sitting in a waiting room, and stress builds.

So, despite warning, there was an argument which turned into a knife fight. The chef, who tried to break it up was stabbed.

It was not simply that having too many waitresses with nothing to do wasted money. It was not even that two fought and chased the patrons out.  As bad as that was. The Chef was put into a hospital.   So who is going to do the cooking?

At another venue, also a restaurant, the owner had three waitresses. One night only one showed up and managed the entire room without chaffing.

The fact is, that two waitresses at maximum for this venue was sufficient. The owner found out by experience so that what I had said was confirmed.

The fact is, the best run businesses are often one person short, this means that managers, supervisors have to fill in when required. Hence, everyone is working.
