It is called ginatan, our native snack food with coconut milk as the base. The most common ingredients are the banana plantain and sweet potato. Some other ingredients that can be added are taro or yam, jackfruit, and ground glutinous rice that is made into small balls. Another variation of Ginatan is the corn and glutinous rice only.
The first step in cooking Ginatan is to boil the coconut milk in the cauldron. When solid particles start to appear, sugar for the taste is added and a bit later the ingredients. Not to forget that the jackfruit is not only the yellow flesh but also the seed. When cooked, the jackfruit seeds taste like nuts and one of my favorite ingredients of the Ginatan.
