Cynara cardunculus or cardoon is closely related to the globe artichoke. However, unlike its sister, it’s the leaves and stems that you eat, rather than the flower. That said, it is one of the most incredibly bitter vegetables I’ve ever tried to eat. ‘Tried’ being the operative word. But I do like its look!
