The name macaroons comes from the Italian maccarone or maccherone meaning “paste”. It refers to the original almond paste ingredient. Their origin story sounds interesting. They were first made in an Italian monastery in 9th century. two Benedictine nuns, Sister Marguerite and Sister Marie-Elisabeth, came to Nancy seeking asylum during the French revolution.The two women paid for their housing by baking and selling macaroon cookies, and thus became known as the “Macaroon Sisters”. Recipes for this decadent dessert firstly appear in 1725, which use almond paste and eggs.
