Breakfast Toast-tada

Toast a piece of gluten free bread and place on a plate.  Scramble a large egg with mushrooms, peppers and onion.  Place egg over the toast and sprinkle with shredded cheese and microwave to melt the cheese.  Serve with slices of apple.  You can also use a toasted corn tortilla instead of gluten free bread, if you prefer.

You can take these meals and mix them up to make them different.  Use different fruits, use different types of nuts, or use another type of hot cereal.  A little creativity goes a long way when your meals have to be gluten free.
