I was very surprised to read this article. Wheat and wheat products are all around us. We love the smell of freshly baked buns and bread. For many, eliminating these goodies from the diet is something unimaginable. However, more and more people are switching to a wheat-free diet. And for good reason. Numerous scientific studies show that wheat consumption can cause many health problems (allergies or digestive problems). The problem is not in the gluten but in the wheat itself. In the way we grow it, we process it and we eat it. This all changed with industrialization when two technological revolutions took place that had a major impact on wheat production. The first revolution changed the way of grinding wheat, while the second completely changed its cultivation. Both have had a tremendous impact on our health, which most people are not even aware of.

You are right. Modernization does nothing good.
I first heard it 15 years ago that wheat commercially produced is not healthy. I substitute it with another types of bread. However, sometimes I cannot resist wheat bakery…

I believe you. I have the same experience. I try to use as little wheat as possible.
for the first year I missed bread. I was lazy and used to make sandwiches. I moved to Oat or Flax pita, and really find I no longer miss bread! we actually eat veggie noodles versus traditional wheat based noodles.
I also have no problem deleting wheat dishes from the menu. There are other cereals that are just as good.
I don’t eat cereal anymore, but I occasionally have Oatmeal.
