The versatile egg and my story

I am told I am a great cook.  I churn out exotic dishes.  I have even tried decorating cakes and stuff but no matter how hard I try I just cannot make a perfect omelette.  The problem is when I try to take it out it crumbles.

Eggs are my favourite.  I use them in many of my dishes.  My date and walnut cake which I bake mainly  for Christmas has 4 eggs in it.  And then there is that bread pudding.  I just dump bread pieces but beat the eggs briskly.  It is the eggs that holds my pudding together

Have you tried making salads with boiled eggs?  That salad is ideal for breakfast.  Boiled eggs with sliced tomatoes and sliced boiled beetroot and the usual dressing is a great fast breaker.

I coat my cutlets with the beaten egg just to hold the cutlet together.

Now coming to the main problem I am facing it is that of the omelette I try to make.  I am using the right ingredients I know for sure  – chopped onions, chopped green chilies, I even add  a dash of scraped coconut and all this is added to the well beaten egg with salt to taste ofcourse.  I heat the non stick pan, put some oil in it and pour the stuff.  It spreads well but when I take it out it crumbles – a great disappointment.

Even when I try to fry an egg with sunny side up I cannot remove it.  The yellow breaks .  I am perfect with boiled eggs and even poached   I poach them sometimes with water and occasionally with milk.

I am fine with the French Toast. The bread turns out golden brown which is dipped in a mixture of well beaten egg, nutmeg, milk  and sugar.

  1. I love eggs in all kinds of ways. I created my own egg pancakes. I got the idea from the Chinese dish egg foo yong. So what I do is depending on how many pancakes I am making say I take four eggs and break fhem in a dish. I had salt and pepper and spices and mix. Then I add chopped ham or veggies or whatever I have on hand even shredded cheese. I mix it all up and then heat up a non-stick pan. I take a tablespoon of the mixture and place it on the pan. Fry one side and the other and I have one pancake and then I do the rest.

  2. I love eggs cooked in certain ways only …
    I don’t really like hard boiled ones … (unless their yolk are runny)

    half boiled eggs are my favourite…
    I hardly succeed in making eggs tho… lol
    they either break or shattered :p

  3. I haven’t cooked anything for while now. But I remember I tried to make mushroom and cheese omelet several times before… well… I did not get them right.

    But with fried eggs… doing it on a low flame will make it right. 😀

  4. I love eggs too. Unfortunately, I’ve never been very good at making omelette. Well, it tastes alright, but never looks perfect! There’s so much you can do with eggs.

  5. Just takes practice I believe. Mine are not perfect but they come out fine. The fried egg seems easier to allow it to slide while turning over, not breaking.

    • Someone in myLot suggested that one should place the beaten egg first and then spread the other items over it. Will try and see.

  6. fold not flip!!!!

    I have a special omelet pan. The rule I learned many years ago. Never cook anything in the omelet pan but eggs.

    That said, it is not easy to fold the omelet and slide it onto the plate. It took me many tries when I was in college (I was a cook at a restaurant).
