The Incredible and Amazing Black Garlic

Black garlic is a mix of different flavors. When bitten into you can taste sweetness with a blend of molasses-like richness and tangy garlic. It is tender to the bite and when raw seems to be a soft dried fruit.

With black garlic, there is no bad breath, pungent odor, and acrid bite. It is just the same as a finely aged wine, it just gets better with age.

In Taoism mythology, black garlic was thought to grant immortality. Well, this, of course, cannot be granted but if you eat plenty of it who knows how long you’ll live. It is great for health and has an abundance of different antioxidants, twice as many as raw garlic. Black garlic also has S-Allyocysteine a natural compound known to help prevent cancer.

So that leaves one question. How is black garlic produced? It is produced by fermentation. This process produces melanoidin, a dark-colored substance giving the garlic its black color.
