Rosettes – a Christmas delight

Some call it rosettes, for some it is known as  rose kokis and they are also called rose cookies  Anyway what’s in  name.  This item is delicious no matter what it is called. 

I have not done them for a while now but I was quite good it at it  All you need is maida (white flour), sugar, eggs and any essence.  The batter is that of pancake consistency. 

Care needs to be taken to see that the batter does not come on top of the form as that will hinder it from coming off the forms. The form is first heated in oil and then gently dipped in the batter and lowered in the hot oil.  The rosette leaves the form on its own and floats in the oil. It is fried for a while and then removed.
