Preparation time: 10 minutes. Serves: 8
Ingredients
- 200g smoked mackerel, skinned, boned and flaked
- 125g low-fat soft cheese
- 1 bunch of chopped chives
- 1 tablespoon fat-free vinaigrette
- 1 tablespoon lemon juice
Procedure
- Place the mackerel and cheese in a bowl and mash together well.
- Add the remaining ingredients and mix well. Alternatively mix all the ingredients together in a food processor or blender.
- Spoon the mixture into 8 small individual serving dishes or 1 large serving dish or mold. Cover and refrigerate for at least 2 hours, or up to 4 hours.
- Serve the pate chilled with wholemeal toast if liked.
Or you could try
Using another omega 3-rich fish instead of mackerel in this recipe, such as canned (in water or brine), drained pilchards, salmon or tuna.
Nutritional tips
Of all the oily fish which are readily available, mackerel is the richest source of omega 3 fatty acids, so enjoy it in all its many forms – fresh, canned or smoked. It is also one of the least expensive oily fish.
