When I tasted the brownie cupcake I am fairly certain I gained 5 pounds with the first bit and it was worth it. I couldn’t quite tell what all the flavors were, but it was clear that it was a perfect delight. She was happy to tell me how she put them together, and I am happy to share that with you! Everyone should gain weight with me!
Heat the oven to 350° F. I used reusable liners in the cupcake tins, she uses parchment liners, either works fine.
Dissolve 2 Tablespoons of instant coffee granules in ¼ cup of warm water. Mix that in with the brownie mix (from the box). Add 3 eggs, ½ cup oil and mix it all up on medium speed. Divide the batter into the tins.
Bake them from 22 to 27 minutes or until you can insert the toothpick in and come out with moist crumbles. Move them to a rack to cool. While they are cooling whip up the frosting.
1 cup butter, 3 cups confectioners sugar, 1 Tablespoon milk and whip it until it’s nice and creamy. Frost the cupcakes and drizzle a touch of caramel sauce on the top.
The calorie count is probably beyond belief, and it’s worth it for a once a year treat.
