Our pickled mangoes

Our mango tree is very prolific that it has given us good harvest twice a year for 18 years now except when there was a typhoon that ruined the flowers. Sometimes I could harvest a total of 400 fruits in one season. But our mango is not of high quality. It is not really very good to eat when ripe because it has fiber that ruins the texture of the flesh. When green, it is sour although it can be eaten with salt.

What we do to make the mango attractive and delicious is to pickle it. After 3 days soaked in the pickling solution, the mangoes become crunchy and the taste is a mix of sweet and sour and a bit salty. It is a hit with the people in our circle who are lucky to have received pickled mangoes every harvest. season.
