My Meal Prep Experiments ~ Jumbalia

I was pleasantly surprised with how the Jumbalia turned out. I didn’t think the rice would be okay to freeze, as it turned out it was perfect. It seems like I can never follow a recipe exactly as written. We have allergies here so there are always substitutions. This meal had been in the freezer for two weeks  We didnt’ have to add anything all we had to do is drop it in the slow cooker. 

We are keeping a list of our wins and failures. All of them seem to work, some we just would make again because of texture or flavors we didn’t enjoy. 

This method is certainly helping us eat a variety and not the same old thing every day. We have not quite figured out the balance of how many meals should be in the freezer and how many should be done the day of. It’s clear to us that we need both.

We got a thank you from our neighbor yesterday. She said she has enjoyed them and she would like to buy some ingredients if we are going to continue to do this for her. I am sure we can work something out. I think it would be fun for her to come put hers together if the prep work was done. We’ll have to see how that goes.

  1. Being alone I never plan ahead meals. I make whatever I crave each day and sometimes eat only once and then have some snacks. My friend and her family who live below me have officially declared me as the family cook so when they give me something to make then I have a whole slow cooker full and then share the meal between all of us. Most days it is whatever I feel like having. Your dish looks and sounds delicious.

    • I set an entire day to do as many prepared and in the freezer as I can and then pull them out so they can cook while I am working. Typically I can get 10 done in a day if I plan right.
