Mushrooms : Food and Fantasy

When one says the word “mushroom” it might provoke various thoughts. Psychedelic dreams.  Fantasy and fairy tales.  Tiny homes for whimsical creatures.  A meat substitute for vegans and vegetarians.

My first experience tasting a mushroom was when my husband (myfiancé at the time) prepared dinner for me.  Steak with mushroom gravy. That was over 40 years.  But from that day forward, I didn’t need convincing to make mushrooms a part of my diet.  But in case you do, perhaps this health article by Popular Science will persuade you.    “4 reasons you should eat more mushrooms”.

Before meeting my husband, I avoided mushrooms for two reasons.

~Number 1:  My mother never used them in any of her recipes.  Mom didn’t cook them. (???)  Maybe they don’t taste good.  (O.o)

~Number 2:  The way people describe mushrooms.  Fungus.mToadstool.  They don’t make the mushroom sound appetizing or visually appealing.

However, many cooks and chefs use mushroom as the main ingredient in their recipes.  Foodies are happy to share photos of amazing dishes where mushrooms are the star of the show.  As for being visually appealing, mushrooms are quite beautiful.  Artists often use them to illustrate fantasies.  Nature photographers go insane! They capture incredible pics just roaming through the woods or the fields.

Here in Scotland (and in many other places) the Oyster mushroom (Pleurotus ostreatus) has the longest running season of all the edible mushrooms. By this I mean that it is possible to find Oysters year round, (P. ostreatus being discoverable year-round and other species including P. pulmonarius or Summer Oyster and P. cornucopiae or Branching Oyster having more defined windows). What I am not suggesting is that this year long season offers up regular fruiting bodies at the same spots. I guess if I had a reliable year round source of Oysters I would soon get bored of them! Instead I have certain spots that I check regularly – particularly in the winter and spring when there is little else about. In fact they do seem to do well in winter because fruiting in this species is triggered by a drop in temperatures. Sometimes these spots provide and sometimes not. It's always a thrill to find a bunch of prime Oysters like these ones, tender and tasty enough to be cooked in any mushroom friendly dish. Phallus indusiatus, commonly called the bamboo fungus, bamboo pith, long net stinkhorn, crinoline stinkhorn or veiled lady, is a fungus in the family Phallaceae, or stinkhorns. It has a cosmopolitan distributionin tropical areas, and is found in southern Asia, Africa, the Americas, and Australia, where it grows in woodlands and gardens in rich soil and well-rotted woody material. The fruit body of the fungus is characterised by a conical to bell-shaped cap on a stalk and a delicate lacy "skirt", or indusium, that hangs from beneath the cap and reaches nearly to the ground. First described scientifically in 1798 by French botanist Étienne Pierre Ventenat, the species has often been referred to a separate genus Dictyophora along with other Phallus species featuring an indusium. P. indusiatus can be distinguished from other similar species by differences in distribution, size, color, and indusium length. Once again Gomphidius glutinosus! ???? . . Follow for more! Follow for more! Follow for more! . . One of the most beautiful species in my opinion. Their esthetic stem with yellow color flesh and awesome narrowing attached gills. This out of space slimy purple or orangish cap. Not to mention these exudating waterdrops drooling out. . . .   1. It’s amazing to see different types of mushroom. Though I don’t know how to cook, I also love to eat foods with mushrooms. It is also great on pizza.
