Mild, Melted Cheese is a Favorite

I love mild cheeses…especially if they’re hot, gooey and stringy – the kind that follows your pizza slice all the way back to the pan, a toasted cheese sandwich or a yummy, stringy cheesy fondue. I definitely think Melted Cheese should be added as its own food group.

Let us not discount a lovely plate of Swiss, Muenster, Cream Havarti, Brick or a mild Parmesan cut into little cubes ready to be speared with a toothpick and popped into your mouth. Wait for it! Wait for it! Yum!

Sure, it’s good for you. Cheese has a lot of calcium; and milk products are excellent for you; but cheese also has a lot of fat. Not to worry. We are disregarding that issue with one exception. I do use low-fat cottage cheese as a substitute for ricotta cheese in lasagna. While I would never eat cottage cheese by itself, the tomato sauce, basil and other goodies make the cottage cheese feel like it is masquerading as ricotta.

Cheese can be made from the milk of cows, goats, sheep and our friend, the buffalo/bison.

Cheese can also be used in sports. One of the famous events is the Cooper’s Hill Cheese-Rolling and Wake which is held annually at Cooper’s Hill near Gloucester, England in the village of Brockworth. People from all over the world gather to chase the 9 lb. round of Double Gloucester cheese down the hill. The cheese has a one-second advantage and can reach speeds of 70 mph. The first person to cross the finish line with the cheese is the winner. Mostly what rolls down the hill are the competitors; and the cheese occasionally scores a direct hit on one or more of the contestants. Because of the risk, the cheese was replaced by a foam replica in 2013. The winner receives his/her prize of the real wheel of cheese at the finish line.

Now to get to the Cheeses that I dislike. Strong-tasting and stinky cheeses: Bleu cheese, Brie, Limburger…There is even a cheese called the Stinking Bishop. You can heat these cheeses up all you want and make them the stringiest, most gooey-looking cheeses on the planet; but the fact remains…They are unappetizingly odoriferous and taste like gym socks. My apologies to those that like their cheeses stinky.

  1. I love cheese in all forms and shapes. My mom always said the best cheese had to be smelly and I have tried some she suggested and they were really delicious except now I find that smelly cheeses are very expensive.

  2. i was in London once many years ago at a restaurant the customer wanted to go to. They rolled out a cart of cheese after the meal.

    My eyes started wandering. Not a fan of stinky cheese!
