Meet our native rice cake

The rice cake in the picture is called “bibingka” which is made of ground glutinous rice and coconut milk. It is baked in a makeshift portable oven right in front of the kiosk. The toppings would usually be slices of salted egg and upon eating it is sprinkled with grated coconut and sugar. The bibingka is very popular during the Christmas season where vendors sell it at the break of dawn.

We regularly buy that rice cake in the Sunday market that would serve as our breakfast. I like it best with cheese toppings and butter instead of grated coconut and sugar.
