Hyacinth Beans

The Lablab purpureus or the hyacinth bean is a delicious legume. It tastes amazing when cooked with tomatoes , herbs and spices Thai style.  We grow it when the weather cools down after the rains. It takes about 3-4 months for the blooms to come up and the pods to ripen.

The pods are harvested just before they ripen, the beans are shelled and cooked fresh. This year my hyacinth beans look good, by January I should have a good harvest. Sadly these vines are attacked by butterflies (caterpillars) and aphids. They eat the young pods as they emerge from the flowers. I need to keep a hawk eye on the plants to ensure that they stay healthy and not attacked by insects.

The young pods have a purple color on them, this is perhaps why they are called hyacinth beans. This is certainly one of my favorite vegetables.
