I know that most people read ” Raw Diet” and think about salad, right?
Well…. that`s a yes and a no because once your eyes have been opened to eating foods raw you`ll be in love with the creations you make.
Making creams for pies from avocados and cashews to making your own breads from corn and flax seeds. Fresh Almond milk. Ice cream from bananas. No flour chocolate cakes, they are made with nuts! the frosting is made from scratch with cocoa and sooooo easy.The possibilities are endless.
Today I would like to share a sweet Raw diet treat and you will never believe that all the ingredients are in raw form and none of the nutrients of the foods have been destroyed by high temps of the cooking process.
I am a coconut lover and this dessert is one of my all time favorites to make and most certainly to eat.
You will need :
2 cups of unsweetened dried coconut
1/2 cup of Almonds
1/2 cup of dried cherries
1/2 cup of agave nectar or honey
1/4 cup of coconut oil, soft
1 tablespoon almond extract
First put the almond in a food processor and process till they are a coarse meal in texture.
Add all other ingredients and process till it begins to stick together.
Scoop out tablespoon fulls and roll into balls. Place on a dehydrate sheet and dehydrate at 115 degrees till dry on the outside and sift on the inside. About 8 to 10 hours.
Makes two dozen.
If you do not have a dehydrator you can use the oven and put them on a cookie sheet lined with parchment paper on the lowest setting but you will kill some of the natural nutrients of the food.
I will tell you now they will not last long these are delicious!
