Cincinnati Chili

I really love chili and I enjoy making a big pot of it and then reheating for most of the week. The one kind of chili which I love the best is Cincinnati Chili. This type of chili is really an adventure in eating. Cincinnati folks take pride in their chili and there are over 180 chili parlors in the city.

What makes this chili different from other chilis is that it’s served over freshly cooked pasta. Mine just has to be spaghetti. Then it all gets topped with the chili which includes ground beef, chopped onions, shredded Cheddar cheese, kidney or refried beans and crushed oyster crackers. When in Cincinnati if you go for the chili with the works then you’re getting ”Five-way Chili”, The greatest and the tastiest thing you can do is to pile on the toppings. I always prefer lots of Cheddar cheese which begins a slow melt on the hot chili.

Who do we thank for this delicious chili? Back in 1922, it was a Macedonian immigrant named Tom Kiradjieff who came up with Cincinnati Chili. His brother John opened up a small Greek restaurant which he called” The Empress”. Things didn’t go too well until they began offering their customers chili with Middle Eastern type of spices and so Cincinnati Chili saw the light of day and became popular. Believe it or not, one other delight is that this chili has got some chocolate added to it.

  1. Skyline chili was a staple for us for 9 years (the time we lived in Cinci). Skyline was the first, then second Cincinnati Chili company was Goldstar.

    My daughter eats hotdogs the way Skyline made them to this day. 2 hot dogs in a bun, smothered in cheese!
