Chicken Cordon Bleu

If I were just cooking for myself life would be simple. I am not just cooking for myself. However, I found a way to make a chicken cordon bleu variation that everyone can agree on. The two men in the house prefer dark meat, so I pound out chicken thighs instead of breasts.

We like panka instead of bread crumbs.

We do not need a lot of cheese so one wedge of “The Laughing Cow” wedges does great. We have tried most of their flavors. So far this adds an interesting “bite” to the ham and chicken and I think it will become our “go to choice”.
