Bring Back Breakfast

I remember family breakfast. I enjoyed it. We laughed and talked and got the day started off on a good note. I don’t really know what happened, but somewhere along the way family breakfast became a rare occasion instead of a great daily habit. Just in case you feel the same way and miss that morning routine, I have some ideas about what you could serve that might bring everyone back to the table. So let’s talk about pumpkin pecan pie french toast. It’s delightful. It sounds quite complicated and yet it is simple to make.

In a shallow bowl big enough to hold a nice piece of texas toast, combine 4 whisked eggs, ½ cup milk, ½ cup pumpkin puree, 1 TBS granulated sugar, and 1 TBS packed brown sugar.

In another shallow bowl big enough to hold a nice piece of texas toast combine 3 cups of crushed corn flakes and 1 ¼ cup of finely chopped pecans. 

Now prepare a baking dish to put the toast on as it is prepared. Line it with parchment paper.

Put the the texas toast in the egg mixture and allow it to soak up the mixture, but not get soggy. Rake it through the mixture of corn flakes and pecans and place it on the baking sheet. Refrigerate these for 20 minutes so the flavors can set. 

Cook the french toast on a griddle with a little bit of butter. It takes 5 to 7 minutes on each side.

We like ours with maple syrup. It substansial. We usually have one for breakfast and save the other for another time. It’s pretty darn tasty!
