Breakfast Sliders

Right now my life needs to be simplified. Having the grandchildren on top of everything else, is a blessing and it does require adjustments. Keeping the boys doing things so they don’t spend the whole day simply worrying is the goal. 

It begins with breakfast. It is something that everyone can be involved  with and it tastes great. It is a good way to start the day. We started preparing breakfast last night by roasting the peppers. You can use them from the jar and buy them from the store. We like ours better.

We have decided to make things a little quicker this morning by using Pillsbury Grands rather than biscuits from scratch.

We prepare the stuffing for the slides in a rimmed baking dish. Then it can just be cut and placed in the biscuits. Easy makes me happy.

Here are the ingredients that we are going to use this morning. 

Avocado oil 

Link sausage

A dozen eggs

1 cup cream

2 cups grated colby jack cheese

16 biscuits (they are great cold as well)

½ cup roasted peppers

Chives

Kosher Salt

Honey mustard

Butter

Fresh spinach leaves 

The first thing you want to do is preheat the oven and the pan. Preheat the oven to 400 degrees. Once the oven heats up put in the rimmed baking sheet and let it heat for five minutes. Remove the hot pan and brush on the avocado oil. Placed the chopped sausage links on the baking pan and bake until it’s cooked through. Remove the pan from oven and scoop the sausage pieces to the mixing bowl. Add eggs, chives, cream, roasted peppers, kosher salt, and 1 cup of cheese. Blend well. Pour on the baking sheet and top with remaining cheese. Bake about 15 minutes, just until the eggs are set.

Spread honey mustard or butter on the biscuits. Cut a piece of the egg mixture and place it in the biscuits and enjoy.

  1. I do not like breakfast recipes with long preparing time, but at weekends I sometimes try something more complex. It sounds interesting, may try one day.
