All About Poke Cake

We are fans of poke cakes. It turns the normal cake into an interesting surprise. In the beginning most poke cakes were basically cakes made from a box and then poked and flavored jello was pour over the cake and it was refrigerated. Most people topped them off with whipped cream. (At least that was the thing where I was in the 70’s.)

People began experimenting with different kinds of cake and different flavors of jello and these have gone in and out of popularity and recipes have been changed, tweaked and created.

So I am going to share one of my favorites. It’s an almond joy poke cake. We don’t use a box mix we use my mom’s homemade chocolate cake recipe. I don’t really know if it tastes any better and it reminds me of Mom, so it works better for me in the way of joy. 

As soon as the cake comes out of the oven, poke the holes with a wooden spoon handle. We like our holes pretty decent sized for this one.  We take ½ cup of cream of coconut and pour over the cake. Put it in the fridge for 30 minutes and let it do it’s thing.

Mix ½ cup whipping cream with ½ cream of coconut. Whip it to the texture you like for a “frosting”. Put in on the cake. Top with slivered almonds and drizzle chocolate.  It is so good!

  1. My mom used to make what she called poked to distraction cake.

    she had a cake pan and a piece of glass. Half the cake was poured in (chocolate box cake) and half the cake was poured in vanilla. She baked it long enough for the case to set. Then when it was cool, and with the glass still in she poured in the pudding on one side (usually vanilla) after poking the cake. Let that sit in the frig.
    Then she took it out and removed the glass.
    Adding at that point the last of the podding.

    As a child my sole goal was to get the piece in the middle! You got everything then!
