You can eat the leaves of chicory when it’s young. You can also take the unopened flower buds and pickle them. And as most of us know, chicory roots can be roasted to make a caffeine-free “coffee.”

I love to watch for chicory along the roadsides and in vacant lots. It’s almost always there somewhere. And it blooms so long!
This is one that a lot of people grow purposely. I don’t need to since it grows in the vacant lot next door.
