The most popular chocolate candy in the world, pralines, came about in a very interesting way – a “happy accident”, as chroniclers wrote. Specifically, a clumsy young assistant cook dropped a bowl full of broken almonds. The angry boss was distraught, annoyed, pulled the young man by the ear and accidentally knocked down a full bowl of spiked sugar, which spilled over the almonds. The aristocrat they worked for eagerly waited for dessert, he was already angry with his late cooks. The chef just scooped up the almonds, topped them with chocolate and served them to the boss who delighted in the taste.

A very lucky accident, (lucky for us). I’m a diabetic so tend to stick to 70% dark bitter chocolate but if you should offer me a praline, I will gobble up any variation.
