Tripe in sauce (Old recipes of the south of Serbia)

I believe everyone loved this dish as soon as he tried it. It’s a specialty in every serious restaurant in Serbia. But they are not very easy to cook. They require good cleaning, rinsing, repeatedly boiling …Luckily, the already cleansed ones can be found almost in all butchers. Just prepare them in mild salt water, and for this is the best pressure cooker. Do not throw the water in which they cooked.

Necessary Ingredients:

  • ½ kg of cooked tripe,
  • 2 heads of the onion,
  • 2 large carrots,
  • 4 garlic cloves,
  • 100 ml of tomato juice or 1 large fresh tomato,
  • mix of spices,
  • pepper,
  • 1 spoon of flour oil,
  • 2 leaves of laurel,
  • parsley,
  • 1 full of spoonfuls (sweet or hot) minced cayenne pepper.

Preparation:

Cooked, chilled tripe cut into strips or squares of bite size and leave aside. In a pot, lightly fry on a little oil chopped onion. Clean the carrot, cut it to the sticks of about 4 cm and add in the onion. Fry it a little, then add chopped tripe with the water in which they cooked. Add tomato, a mixture of spices, pepper to taste, chopped garlic, laurel and cook for a maximum of half an hour. In the meantime, if necessary, add a little more water to get a medium density soup. Fry a spoon of flour on a little oil, remove from the fire, add a spoon of cayenne pepper, mix it fast and add it to the meal. Cook, stirring occasionally for another 5 minutes, add chopped parsley and immediately remove from the fire. Serve warm. Cooked potatoes, pasta can be used as an eating supplement.

Along with good white wine, good appetite !!!
