In the olden days when duck eggs were not sold, the vendor had thought of a way to preserve the duck eggs. It is submerged in salted water for 2 to 3 weeks and then boiled. The result is the salted egg which is a favorite for breakfast and for salads. Mixed with fresh tomatoes, the salted egg is a nice side dish for fried rice. It is actually our favorite breakfast on weekends when we have dried fish to match the combination. The salted egg is also a nice flavoring for rice cake and some other snack foods.
If you care to sample salted eggs, do what the vendor did with the excess egg and that is also applicable with chicken eggs.
