This is an unusual and simple to make pasta dish with a southwestern flair. The original recipe has no meat, but you can add meat if you wish, it is great made with spicy sausage or grilled chicken. (meat must be precooked) I usually serve this dish with toasted pita wedges, but it is also great with grilled tortillas or corn chips.
Ingredients:
- 8 to 10 ounces of pasta spirals
- 1 tablespoon olive oil
- 1/2 cup onion, chopped
- 1/4 cup red bell pepper
- 1/4 cup green bell pepper
- 1 teaspoon minced garlic
- 1 15 ounce can of red kidney beans drained
- 1 can diced tomatoes and green chilies (like Rotel)
- 1 cup tomato juice
- 1 cup of chopped fresh spinach leaves
- 2 tablespoons of fresh minced basil (or 1 teaspoon dried basil)
- 1/4 teaspoon seasoned salt
- dash of black pepper
Directions:
Cook pasta el dente and set aside
Saute the onion, garlic and peppers in oil until partially soft and beginning to brown
Add 1/4 cup of warm water and stir in diced tomatoes and chilies, tomato juice, beans, spinach, and basil
Stir everything together and lower heat
Simmer for about 10 minutes, or until spinach is cooked
Add the pasta, stirring gently until everything is hot and mixed.
Add seasoned salt and pepper to taste and serve immediately
