Noooo! These are not the healthy rice cakes you buy at the grocery store. Sometimes we use rice in a savory dish and other times for that sweet craving.

These rice cakes are more of my down South cooking. If you like Bacon, you will love this!
You will need :
4 Slices of Bacon – cooked and chopped
3 Tablespoons of chopped onion
3 Tablespoons of chopped green bell pepper
1 teaspoon of salt
1/2 teaspoon of black pepper
3 cups of cooked rice
1 cup of flour
1 cup of canned diced tomatoes, drained and I mean really drained!
Fry bacon till crisp. Mix all the other ingredients together and then add bacon.
Heat a cast iron skillet on medium heat and add bacon drippings.
Drop by tablespoons into hot bacon grease and brown on both sides.
Remove to paper towel. Serve hot.
Makes 16 rice cakes.

Rice and pineapple
Hot rice leftover from dinner? just make a dessert for tomorrow nights dinner! This is one of the easiest dessert to make and its only four ingredients.
You will need :
2 cups of cooked rice
4 slices of canned pineapple, halved, reserve juice
1/2 cup brown sugar
Butter
Preheat oven to 350°
Place 1/2 inch of rice on bottom of casserole dish.
Dot with butter and arrange pineapple slices over the butter.
Sprinkle with brown sugar.
Repeat in layers till all ingredients are used, letting pineapple be on top.
Cover with the reserved pineapple juice and bake for 30 minutes.
Serve hot or cold.
Makes 4 servings.
I absolutely love both of these rice dishes, One savory and one sweet. The best thing about rice cakes and rice with pineapple is that you already have this stuff in the pantry, nothing extra to buy.
Note : You can use brown rice instead of white rice. You can also cut the pineapple juice in half and use heavy cream or milk, with an  beaten egg for that rice pudding texture.

Are you gonna add the pineapple to the bacon rice cakes? BAM! like chocolate and peanut butter 🙂 I like that.

Its good, I use turkey bacon.
