Recipe for Lazy-Man's Chicken Parmesan

Today is Father’s Day. Since I make it a point of making whatever the girls want on Mother’s Day, they demand the opportunity to fix whatever I want on Father’s Day and won’t accept no for an answer. Today, largely because it is Sunday, I opted for lazy man’s chicken parmesan. It requires the minimum of effort.

As it sounds, this dish is very simple to make, it doesn’t take long, and it is also not the healthiest meal around because three of the main ingredients are premade. That shortens the cooking time considerably.

Lazy Chicken Parmesan ingredients:

Pre-made and precooked chicken patties, 2+ per person

1 onion, sliced and broken into rings

1 pint/2 cups spaghetti or pizza sauce

~ 1/2 pound grated cheese of choice, depending on the number of patties

1/2 to 1 teaspoon oregano

1/2 to 1 teaspoon parsley

Lazy Chicken Parmesan instructions:

1. Thaw the chicken patties. A microwave oven can be used for this if needed.

2. In a baking dish, arranged the patties in a single layer. Layer the ringed onions over the top and pour the spaghetti/pizza sauce over all. Sprinkle with oregano and parsley.

3. Add the cheese over the top of the sauce covered patties. The more cheese that is added, the more filling it is.

4. Bake at 400 degrees F until the patties are thoroughly heated and the cheese is melted. This takes about 15-20 minutes.

The patties can be served over cooked egg noodles or plain. Also, the choice of cheese is up to you. My favorite kinds of cheese to use are cheddar, jack, or mozzarella, or a combination. 

Normally, I make my own sauce, since it is so simple to make, however, I’m not supposed to be cooking any of it so I opted to make the task as simple as possible for my wife and daughter.

I’m the only one in the household that will eat piquant/spicy foods, otherwise, I’d also add sliced or diced jalapeno peppers for a sizzle. I won’t even suggest it, though, because I want everyone else to eat their share, too. Incidentally, I’ve also made this with sauteed onions and the flavor is even better, but it is more effort. I’ve also put cooked bacon on this and the taste is fantastic.
