Raw Vegan Spinach Soup, Dressing & Drink

Today, for my late lunch, I decided to make another raw vegan soup from my Green Smoothie book. It is a cold soup because it is raw vegan, but it is still good cold. I used tomatoes, sundried tomatoes, leek, lemon, and spinach leaves instead of parsley leaves because I only had spinach leaves. But I did add some parsley flakes from my spice rack. There is also one cup of water, in which I am not sure it needed water because of all the juicy tomatoes and lemon in the recipe. I placed ingredients inside a blender, and mixed well until I got a slightly chunky but mostly liquid consistency, similar to most soups. It was really tasty. I tasted mostly tomatoes, which was like eating a cold tomato soup that has other added spices. As I ate it, I thought it would also make a good salad dressing. And, if I add more water, I can make a veggie drink. It made 3 cups. I ate one cup, and placed the rest in the refrigerator. I felt full right away with only one cup.

I still have not heated these “raw vegan” soups, like real soup, but I guess if I heat them then they will no longer be raw, although still vegan. Maybe I will heat tomorrow bowl to create a warm vegan spinach soup.

But I wanted a dessert so I decided to make hot cacao. I decided to make it via the stovetop method rather than microwave method because hot cacao tastes so much better and richer via stovetop method. When I heat the cacao power, water and some sugar in the little pot, I later add some vegan mini marshmallows. It expands and melts with the hot cacao, which looks like a cappuccino cup. I just add some cinnamon or pumpkin pie spice on top, after pouring mixture into my mug.
