Raw Vegan Fruit and Nut Bars

I’ve spoken a bit about the health benefits of a vegan diet so, to follow on from that, here’s a nice, tasty recipe for some raw vegan fruit and nut bars. They only have 4 simple, healthy ingredients and can be made quickly and easily with the help of a food processor. So, what are you waiting for – lets go!

Ingredients:

  • 450g partially dried figs
  • 2006 walnuts
  • 100g sunflower seeds
  • 20g cocoa powder

Step 1: Put the walnuts and sunflower seeds into your food processor and blend for about 30 seconds or until they have broken down into a breadcrumb-like texture.

Step 2: Add the cocoa powder and blend again.

Step 3: Add about a third of the dates and blend until they are combined. Do this twice more until all the dates have been blended in and the mixture sticks together.

Step 4: Spread the mixture out evenly onto a 12″ x 8″ pan/dish lined with greaseproof paper. Put in the refrigerator for 30 minutes to 1 hour.

Step 5: Slice into 12 even pieces and enjoy! 🙂

Here’s an approximate nutritional break down per bar:

  1. It sounds good and chewy. I like making raw food meals, especially right after I bought Raw Food book from Barnes & Noble, which taught me how to make all kinds of raw vegan recipes, such as raw vegan pasta, pesto, and interesting dishes. it is fun to do, and perfect for me because I don’t really cook.
