Pumpkin 'Flour'

As a Chef I am always searching for something different, something special, something that Only I can create.

I am always alert to those strange but delicious innovations.

That is how I came across Pumpkin ‘Flour’.   I put the word ‘Flour’ in quotes because it is not flour as you know it, but used as a substitute for flour.

It is very easy to do and if you try it, you might be surprised at how delicious it will be.

What you do is get a fresh pumpkin and use your grater.  If this recipe calls for “two cups of flour” use one cup of flour and one cup of the grated pumpkin.

This is magnificent for doing bread, buns, muffins, whatever you are baking.

Pumpkin reacts beautifully with cinnamon and ginger which elevates the flavor.

You simply follow your recipe, use only 1/2 of the flour requirement, using the grated pumpkin for the other half.

It is marvelous!
