2-3 medium size shredded potatoes

Put a pan on to heat with a bit of oil. The pan must be very hot. Meanwhile, place the shredded potatoes in a bowl and combine with the eggs and breadcrumbs and spices. The consistency must be so that you can shape potato patties and put them on the pan to fry golden brown. So I don’t give direct instructions as to how much breadcrumbs. The idea is to first fry all of the potato pancakes putting them on a dish as you go along.
Once they are all ready. Put some back on the pan top with tomato sauce and top with shredded cheese. Turn the heat down a bit so they don’t burn. Place on a lid and wait a few moments for the cheese to melt. Take this batch off and do the rest. Placing them on a platter in one layer. Once done you can serve them with a tossed salad and garlic bread or anything else that comes to mind. You can expand this recipe if you like just adding more egg and breadcrumbs as needed. Spices can also be added according to what you like. Just salt and pepper or oregano, garlic salt, and other spices of your choice. The cheese can be any kind you like. I prefer cheddar. If you like you can even top the tomato sauce on each pancake with a thin slice of smoked salami or pepperoni. Enjoy.
