I think these are the best muffins I’ve ever seen. Cakes with coconut, and cream cheese. Excellent, fast, and too simple, perhaps simpler can not be. These are cookies, without eggs, but do not have an aversion to prepare muffins in this way. They’re still better tomorrow. They can also be prepared in a silicone mold. Good appetite.
