Crazy Busy Working Mommy Lunch

Too busy to make a lunch today. So, will revert to my old standby!

Greens? Check! Protein? Check! Carbs? Check! Fat? No need! Deliciousness? Check!!

Layer on top of a bed of greens...

• a layer of rice
• a layer of beans
• a layer of salsa.

Fast and easy! Quick and yummy! 'Cause that's how you have to roll sometimes.

  1. I just bought some zucchinis because I plan to make some raw vegan zucchini noodles but with potato peeler. I will probably use fruit and spices to make the sauce, such as maybe papaya.

    • Make sure to squeeze as much water out of them as possible.

      That sounds delicious! I love spicy/sweet. Maybe add a touch of cayenne to the papaya.
