Low Carb Green Smoothie Recipe

If you are like me and don’t like to eat vegetables, or just don’t get the recommended daily amount then I may have a recipe for you. It’s recommended to eat 7-10 cups of vegetables a day, but who could do that?  I know some people out there really love vegetables so it wouldn’t be difficult, but for some (like me) it’s impossible.

However, drinking your greens (like spinach or kale) is much easier. You can pulverize it into a smooth drink and add stuff to make it taste better (even sweet if you would like). 

Here is the recipe I like to use.  You can drink it all at once if you’d like or split it up into two meals. Drink it as the veggie side to your meal. 

  • 8 oz Spinach 
  • 1/4 cup blueberries (If you don’t use frozen blueberries, add some ice to the recipe)
  • 1 tsp ground cinnamon
  • 1 tbsp unsweetened cocoa powder
  • sweetener if you would like (I use liquid Splenda)

Blend together till nice and smooth. I use a nutribullet for my smoothies.  

Nutrition Info (for the ingredients I use): 

101 calories

1.2 grams of fat

8 net carbs (because your body doesn’t use the fiber)

7.3 grams of protein

1,439mg of potassium

If you’d like you could use Kale for your smoothie. The carbohydrate count would be a bit higher, but there would probably be more potassium and other essential micro-nutrients.  I don’t use Kale (yet) so I haven’t look at its information.

  1. I’m not sure I’m brave enough to try it! No matter, though, because we eat plenty of green vegetables in my house. We love spinach, chard, kale, and lots of other kinds of greens. We get different greens each week when we get our CSA basket or veggies from the farmers market. I love to mix them together and saute lightly. We eat this several times a week with our supper and usually have a big salad too.

    • Well sounds like you get plenty of greens in. That’s great!

      I can’t eat them (I am a picky eater and therefore vegetables make me nauseous) but drinking this smoothie I can get them down. I drink one smoothie every day and don’t have to worry about it the rest of the day.

      The smoothie is pretty tasty though!
