Life is difficult as a diabetic and we are often told to live a low carb lifestyle. However, people don`t understand that they can have many fruits and vegetables and they “are” low carb and filled with all the vitamins the body needs to function properly.
One of the best ways to get a meal packed with these vegetables is a good old fashion vegetable salad.
All of these vegetables are low carb and okay for diabetics to chow down on!
Lettuce
Spinach
That is your salad bed.
Tomatoes
Cucumbers
Bell peppers
Onions
Alfalfa sprouts
Mushrooms
That is your main filling.
Avocado
Garlic
Lime
Mash the avocado with garlic and lime juice
That is you topping!
There you have a super low carb meal and you reap the benefits of all the vegetables for a healthy mind and body.
