If there is something that can be made differently every time you bake it that is meatloaf There are so many variations to making this simple but delicious meal. Here is my version.
1 or more lbs. of ground beef (depending on how many people for dinner)
2 or 3 ground smoked sausages such as kielbasa
Cloves of a whole garlic bulb crushed
½ a cup or more of breadcrumbs
2 or more beaten eggs
½ a cup of Parmesan cheese
Couple of tbs. ketchup depending on taste
Adjust seasoning salt, pepper, oregano and any other seasoning you like
Large can of crushed tomatoes
1 – 2 chicken bouillon cubes
Mix it all together well in a bowl and shape into a loaf and place in a medium hot oven. I adjust as I go because we have different oven temperatures usually 350 degrees F for 1 hour.
Before the meatloaf goes into the oven in a medium saucepan add crushed tomatoes with the juice, i or 2 chicken bouillon cubes depending on taste, a splash of dry red wine, and tomato paste until the sauce is thickened.
Now once the meatloaf is in its loaf pan or baking pan pour the sauce over it and bake.
