From Hotdish to Huckleberry Pie

The iconic comfort foot of Minnesota sounds really good. It is called hotdish and could be referred to as a casserole. It is made with ground meat, canned vegetables, and crispy tater tots. To me, it is food that you can make your own way. You can use frozen veggies or even fresh veggies and any kind of ground meat you like including a mix of pork and beef. I like the idea of using tater tots instead of regular potatoes. It gets all mixed together with a creamy canned soup like cream of mushroom.

I never knew this but the state of Mississippi is home to the Biscuit Capital of the World, Natchez. It all began with the flaky biscuit recipe of Chef Regina Charboneau. She made it special by mixing together French and Southern styles when making the biscuits. Checking online I discovered something I would like to try making, sweet potato biscuits.

I know most people who enjoy Italian food love ravioli. Well in St. Louis, Missouri they serve it as an appetizer and a main course. The classic way they make ravioli is to deep fry them. The ravioli get dipped into milk, rolled in bread crumbs, and then deep-fried until golden brown.

Finally, we come to Montana and they are known for their huckleberry pie. The huckleberries get used in pies, muffins, jams, and even cocktails.
