When I came to Spain I liked paella, but it took me a while to learn cooking. You will say that there is no great philosophy to cook a rice. But it’s not like that. My friends always invited her to invite me. They were telling me what products they needed and how they cooked, but they always missed a little detail. Add all vegetables and fry to gold. Sprinkle with saffron and pour 3 cups of water. Allow the water to boil well and reduce the fire. And then you pour the rice. Stir, stay boiling again. Reduce the heat as low as possible. You do not confuse the rice, you only turn the pot. So on a quiet fire stays in about 20 minutes. Then you let it cool down. I always serve a bowl of salad.   1. There was a restaurant “El Cubano” where I used to eat Paella all the time. Paella, risotto, gumbo, are my top 3 comfort foods I think.
