Carrot raisin salad is a remarkably good tasting side dish that isn’t difficult to prepare, though for best results, it should sit in the refrigerator overnight. It is so delicious that it is a salad that I’m requested to make for most holiday dinners and get-togethers.
Carrot raisin salad is also quite healthy. Carrots are extremely high in vitamin A and they are a good source of vitamin C, B6, niacin, calcium, potassium, magnesium, manganese, and phosphorus. An entire cupful of carrots contains only about 53 calories, though the carrot raisin salad has more because of the other ingredients.
Most people know that carrots, especially raw carrots, are very good for them. However, there are people who don’t like the taste of carrots, particularly raw. This salad solves that problem because the taste is sweet and the flavor of the carrots isn’t overwhelming.
Carrot raisin salad ingredients:
- 4 pounds carrots, shredded
- 1 can crushed pineapple, including the juice
- 1 cup mayonnaise
- 1 cup sugar
- 1 cup raisins
Carrot raisin salad instructions:
Mix all ingredients thoroughly in a large bowl and refrigerate, preferably overnight. Stir before serving.
Letting the salad mixture sit overnight allows the flavors to combine and to sink into the shredded carrots. The salad should sit in the refrigerator for at least a few hours if it can’t be stored overnight.
For something even more special, add a cup of dried currants or replace the raisins with dried currants. (We are referring to real currants here. Zante currants aren’t currants, they are raisins.) Dried cranberries can also be used.
Refrigerated, this salad lasts a surprisingly long time, assuming that it doesn’t get eaten right away. We’ve had week-old carrot raisin salad that tasted perfectly good and as if it had just been made the previous day. It had been inadvertently pushed to the back of the refrigerator while putting away the leftovers from a Christmas feast. Once it was discovered, it was devoured quickly.
Our holiday meals usually feature many different kinds of salad and carrot raisin salad is one of those that is normally served. If I forget to make some, my family lets me know in no uncertain terms. The interesting part is that not everyone in my family likes carrots, yet they will come back for a second or third helping of the carrot raisin salad.

Love the carrots, the raisins and the pineapples but not the mayo. Can I squeeze some lemon juice instead?
It is lacking if there is no mayo. The mayo brings out the flavor in everything else and helps the flavors sink into the carrots. Sometimes I even make homemade mayo specifically for this recipe.
