There is a wonderful salad in Latvian cuisine known as Rosols. My mom made great Rosols and I will relate the recipe to you. The basic ingredients are as follows:
- Take about 15 medium sized boiled potatoes (you can use more or less adjusting the ingredients to accommodate the quantity), a pound of ham, 2 pieces of herring fillet, 2 cucumbers, 2 – 3 medium sized pickles, an onion. All of the above-mentioned ingredients are then cubed finely and put into a large salad bowl.
- For the salad dressing, you will combine sour cream, some of the juice from the pickles, 1 tablespoon of olive oil, a little wine vinegar, a pinch of mustard powder, a bit of sugar, mayonnaise and a bit of horseradish. Mix it all together adjusting for taste.
- Then this dressing is added to the cubed ingredients and mixed in. The salad should be creamy, not dry. It should then be chilled for about ½ an hour to let the flavors come together.
If you like you may also add cubed hard-boiled eggs and/or boiled beets to the salad.
According to preference you can also leave out the herring and add green peas.
This salad may be made as large or small as you like.
